Simple Fish Cake Recipe

Fish cakes are everyone's favourite. They are simple to make, require very few ingredients, are less messy and taste great.  Ingredients such as lemon grass, ginger and Kaffir lime leaves used to make these fish cakes give it a tangy taste and a Thai twist. Serves as an excellent party starter or any time snack.

Ingredients for Simple Fish Cake Recipe

White fish fillet - 350 gm
Kaffir lime leaves - 2
Onion - 1, small
Ginger - 2 to 3 slices
Garlic flakes - 2
Lemon grass - 1 tsp chopped
Coriander leaves - 1 tbsp, finely chopped
Fish sauce - 1 tbsp
Potato - 1 large, boiled and mashed
Green chili - 1
Egg - 1, beaten
Peanuts - 1 tbsp, crushed
Green beans - 8, thinly sliced
Breadcrumbs
Salt
Oil, for frying

Method for Simple Fish Cake Recipe

Blanch the lime leaves in hot water. Allow to cool and shred them.

Grind onion, ginger, garlic, lemon grass and green chili to fine paste.

Put this paste in a food processor and add fish, fish sauce, mashed potato, peanuts and salt. Process till smooth paste.

Remove in the plate and add to it chopped coriander leaves, thinly sliced green beans and shredded lime leaves.

Mix well and divide in equal portions. Flatten the fish cake, roll in breadcrumbs and shallow fry  on medium hot oil till golden in colour on both sides.

Serve hot with a dipping sauce.

Tip

You can use fresh lime leaves as a substitute for Kafir lime leaves.

Thai Red Curry Recipe

Chicken and vegetables in red spicy Thai curry paste cooked with coconut milk

Ingredients for Thai Red Curry Recipe: 

Chicken - 200 gm, boneless, diced
Baby corn - 8 no, cut lengthwise
Mushrooms - 10 no,  roughly sliced
Broccoli - 1 small, separated into small florets
French beans - 8 / 10
Coconut milk - 2 and half cups, thick
Thai Red Curry Paste - 3 tbsp
Soya sauce - 1/2 tsp
Basil - 2 tbsp
Oil - 2tbsp
Brown sugar - 1/2 tsp
Salt, as required

Method for Thai Red Curry Recipe

In a pan, saute Thai red curry paste along with 2 tbsp oil. If cooking in a microwave, mix red curry paste along with oil in a Microwave Safe dish and set on HIGH for 3 minutes.

Add to it half of the coconut milk along chicken and vegetables and saute for few more minutes. In Microwave add vegetables and chicken along with coconut milk and keep on HIGH for 4 minutes.

Add to this rest of the coconut milk along with soya sauce and chopped basil. Mix and continue to cook. Microwave further for 4 minutes.

Add to this salt and brown sugar and continue to cook for 1 more minute.

Serve hot with steam rice.

Thai Stir Fried Vegetables Recipe

Enjoy this bowlsome of veggies with a Thai twist. Very easy and can be made in minutes
 
Ingredients for Thai Stir Fried Vegetables Recipe:

Baby corn - 8 nos, halved
Mushrooms - 100 gm, halved
Celery - 1 stalk chopped
Cherry tomatoes - 100 gm
Garlic - 2 cloves, chopped
Thai red chillies - 2 nos, split lengthwise
Zucchini  - 1 sliced
Bell pepper - 1 sliced
Soy sauce (light) - 2 tbsp
Worcestershire Sauce - 2 tbsp
Pepper, as required
Salt, as required
Sesame oil  - 2 tbsp

Method for Thai Stir Fried Vegetable Recipe:

In a wok, heat sesame oil and add garlic and saute till golden. Add the celery and fry until they get soft.

Add to this baby corn and stir fry for 2 minutes. In a similar manner keep adding other vegetables and continue frying.

Add both the sauces and stir fry.

Add basil finally and serve hot.

Please note: Don't keep frying the vegetables for too long or they would turn soft. Let the veggies taste done yet crunchy.
