Carrots - 500 gms, cut into long strip
salt, as required
Cumin Seeds - 1 tsp
Mustard Seeds - 2 tsp
Turmeric - 1", whole
Fenugreek Seeds - 1 tsp
Sugar - 2 tbsp
Garlic - 1 whole pod, peeled
Oil - 2 tbsp
Ginger - 1"
Vinegar - 1 cup
Method for Carrot Pickle Recipe:
Apply salt to the carrot strips. Keep aside.
Boil the vinegar along with sugar. As soon as the sugar melts, add all the ingredients except for the carrots and oil and cook for a while.
Now add the carrots and keep cooking for a while.
In another pan, heat oil and add the above mixture. Cook for few more minutes.
Add 4 tbsp sugar to it. Mix well. Take out from heat and allow it to cool.
Once done fill in a air-tight bottle.
Tip: This recipe of carrot pickle is a typical East India Pickle. Hence the addition of vinegar. East Indian Pickles are very popular and tried by many. They are available for sale in many shops selling East Indian masalas and products. Try making it at home and let me know how it turned out to be.
