How to make Tomato Concasse

Tomato Concasse works as a perfect pizza sauce and once prepared can be frozen for later use.

Ingredients for Tomato Concasse Recipe:


Tomato puree - 500 gm
Onions - 4, finely chopped
Garlic - 4 flakes, chopped finely
Celery - 2 stalks, chopped finely
Bay leaves - 2
Basil leaves - 3-4, chopped
Oregano - 1 tsp
Olive oil - 2 tsp
Salt, as required
Pepper, as required

Method for Tomato Concasse Recipe:

In a pan heat oil and drop in the chopped onions. Saute.

Add the garlic, bay leaves, oregano and celery. Stir.

Add the tomato puree, celery, salt and pepper. Continue to saute.

Keep cooking till thick. Remove from heat.

Discard the bay leaves and refrigerate.

Use to top on pizzas as pizza sauce.
