Chilled Prawns with Salad Greens and Pomegranate Dressing Recipe


Serves as an excellent brunch menu and is ideal for lazy Sunday evenings!

Ingredients for Chilled Prawns with Salad Greens and Pomegranate Dressing Recipe:

Prawns - 250 gm, cleaned and deveined
Iceberg lettuce - 50 gm
Rocket lettuce - 50 gm
Lolo Roso lettuce - 50 gm
Pomegranate dressing - 30 ml
Black olives - 20 ml
Lime - 1, cut into wedges
Tomatoes - 60 gm
Parmesan Cheese curls - 30 gm
Lime juice -  5 to 10 ml

Method for Chilled Prawns with Salad Greens and Pomegranate Dressing:

Boil enough water in a saucepan and add some salt and lime juice to it. Add to this prawns and simmer for 3 to 4 minutes till you find the prawns cooked.

Wash the lettuce leaves thoroughly. Chop them coarsely or you can also do it with your hand, just break them in large pieces.

Slice the tomatoes and halve the olives.

In a serving bowl, toss together the prawns, lettuce, pomegranate salad dressing and the tomato slices.

Top the salad with black olives, lemon wedges and cheese curls.
