Very often, we bake biscuits just the way they are been told to. But yet something goes wrong. I planned to post this in the Handy Hints. But then I though maybe it should be a How to Question as there are many points to cover. Once you go through all of the following mentioned points you know where you went wrong. For Baking Light Biscuits, I can go on and on. If you have some don't forget to add them. Add your tip as a comment, let me know if there's something I missed out. Here I go:
- For baking light biscuits ensure that the butter that you use in the biscuit mixture has been beaten well. The butter or ghee that you use should get fluffy enough to make the biscuits light.
- Even the flour that would be used for the cake mixture should be sieved at least thrice for that lightness.
- Don't over knead the dough that you would use for the biscuits. And don't try and fiddle with the mixture. Avoid minimum handling. Just stick to the steps.
- For baking biscuits see that the baking tray to choose is shallow. Shallow trays ensure sharp baking, which is very important for baking light biscuits.
- The most important point which always is the one that affects good baking, your baking powder! For people who aren't into baking regularly and think of it once in a Blue Moon, use the same baking powder which they had used some six months ago. Now if you fit in this category, you know what went wrong. Old baking powder which hasn't been used for ages can be the culprit for destroying your biscuits. For those who regularly bake, its okay to use the same baking powder. But for guys, who bake once in 6 months do remember to use Fresh packet of Baking powder for desired results. Now don't think of wasting that money on this packet. What is more important, damn good biscuits or the stale baking powder!!
- Many suggest use of 2 tsp of Butter for 100 gm flour. This use of butter is while kneading dough. I haven't tried that but someone suggested. So think and do it if you feel it can be useful..
- Use of Beaten margarine, cornflour and icing sugar is said to help the biscuits get lighter. I am sure that can be really helpful..
