Bird's Nest Salad - High Protien Salad

Ingredients for Bird's Nest Salad:

Chickpeas - 1 cup, cooked
Kidney Beans - 1 cup, cooked
Corn - 1 cup, cooked
Beansprouts - 1 cup, cooked
Red pepper - 1/4th cup, diced
Onion - 1, chopped
Lettuce - 1, separate the leaves and set aside
Jalapeno Pepper - 1, finely chopped
Lemon juice - 3 tbsp
Coriander leaves - 2 tbsp, chopped
Cumin powder - 1/4th tsp
Garlic - 1 flake, minced
Black pepper powder, as required
salt, as required

Method for Bird's Nest Salad:

In a large bowl, mix the jalapeno pepper, lemon juice, minced garlic, cumin powder, salt and pepper. Mix well.

Add to it the cooked kidney beans, cooked chick peas, corn, red peppers and onion. Mix well.

In a large serving bowl, arrange the separated lettuce leaves in a shape of a nest. Gently remove the salad in to the leaves. Serve.

Tip: This salad is undoubtedly healthy and very easy to make. The Bird's Nest Salad is rich in protein and fibre. The above measurement serves four.
