How to cook Mutton Paya perfectly

For cooking mutton paya (meat legs) perfectly pressure cook the Mutton paya in a big pressure cook till 1 whistle. Then lower the flame and allow the mutton paya to cook for an hour on a slow flame. If you feel that the water must have reduced or you think you added very less water, then no problem, just remove pressure cooker from heat and allow it to cool. Open and check the water and add more and continue cooking. The paya takes time to cook on open flame but pressure cooking allows Paya to cook in an hour or so.
